About the producer
Situated in the Central Province of Kenya in Embu County, Rungeto Farmers’ Cooperative Society Limited was formed in 1997 to support the processing and marketing of the quality produce from the cool altitudes of local coffee communities. Their strong leadership, consistent membership and established processing infrastructure has enabled them to partner with a variety of organizations and institutions. They promote good agricultural practices to increase the quality and yield of members’ coffee to enable them to fetch the best possible price.
About the processing
Hand picked ripe cherries are sorted for defects before being sent into pulping, which removes the skin and pulp from the seed. Residual mucilage is removed through fermentation in tanks, followed by washing to scrub off any remaining traces of mucilage, and a soak. By this step, the coffee seeds in parchment would have a moisture level of around 55%. This will be reduced to 10-12% by laying them out to dry on raised beds under the sun for approximately 14 days.
