About the producer
Oscar's 10-hectare farm El Progresso sits at a staggering high 2060 masl in Totoro, Cauca.
Colombian micro lots are sourced basis cup quality and are both the highest-quality and one of the highest price tier of the coffee Cafe Imports sources from this country. The cup must achieve 87+ points and is separated based on its particular specs, whether it is a farmer-specific or a variety-specific lot. These are highly traceable coffees.
This hybrid cross was developed by Cenicafe (the scientific research arm of Colombia's National Federation of Coffee Growers) to replace the no-longer-coffee-leaf-rust-resistant Variedad Colombia; released in 2005.
About the processing
The coffee is picked ripe when the cherries turn purple and sorted meticulously to comprise this special lot. It is fermented in a hopper for 16 hours before being de-pulped and fermented in a tank for 24 hours. After fermentation, the coffee is washed three times and dried in a gable-roof dryer for 10–15 days.
